Hey guys, Jess here!
Who loves tacos? Yea. That’s what I thought! We all love tacos, they are hand held bundles of delicious. Vegan, vegetarian, carnivores a-like love tacos.
You know what I love almost as much as tacos? Tater tots.
The love I have for these two foods drove me too create something that I cannot wait to eat again. Taco Tots.
You read it here folks! Taco Tots!
It’s got taco meat, tomato sauce, tater tots, cheese! I added sour cream and hot sauce to my plate! So good.
Would you like to make this for supper? Yea? Sure! I’ll give you my recipe.
Typically with taco anything I use my home made spice, because I like that it’s a dry spice mix, and has way, way less salt than the packaged stuff. I’m not 100% ready to share it with the world yet though (it’s almost perfected!) so for this recipe you’ll be using a packaged sauce mix of your choice!
1 pound lean ground beef
1 green pepper diced
1 onion diced
1 cup mozzarella (full cup, don’t even measure, just shred until you’re happy about it!)
1 can tomato soup
1 bag of tater tots
1 taco spice mix
Taco toppings of your choice!
In a big skillet brown your meat with the onions and peppers.
Once the meat is cooked, follow the taco spice directions and mix it up! Once the meat is ready, add the can of tomato soup.
Let mixture come together and bubble for 3-5 minutes, just to let everyone in the pool get to know each other.
Dump the meat mixture into your baking dish, and arrange your tater tots to your liking (this is where I got a little crazy, because my tots weren’t cooperating with the shape of the baking dish. It hurts a little to think about it)!
Sprinkle your shredded cheese on top!
Bake at 350 until the tater tots are cooked through, and the cheese is golden and bubbly!
I hope you guys enjoy this recipe! We certainly did. If you decide to make it, let me know in the comments what you thought!
Don’t let the winter funk get you down!
